It might not be on the same level of “easy and quick” as some of the other suggestions here but chili is really simple once you get the hang of it and you can kinda just dump random things from around your kitchen in and make a large amount of food relatively quickly and without a ton of effort.

There’s !recipes@lemmy.ml
There is https://lemmy.ml/c/cooking looks rather inactive though, perhaps post your favorite recipe there?
Something super easy if you have an oven: Just put some soft cheese (for example Camembert) into your oven for about 20 mins at 180°C. Cut it open after about 10 mins the way you can see here:
If you don’t have anything to put it into for baking, just wrap in Aluminium foil.
Then eat it with baguette, chopped vegetables or even grapes.
Chili con soy/tofu.
Just onions, garlic, tomato concentrate, kidney peas, corn, pepper.
You add pepper powder, some herbs, nutritional yeast extract, soy sauce for the umami.
The soy granulate or tofu is best when soaked in herbs, nutritional yeast and soy sauce.
Just throw everything together and boil for 20min.
sounds really good. If you can find dry kidney beans, they are way cheaper and it’s easier to add larger quantities ;)
This recipe is good for you, the climate and the animals!

Rice and canned goods, add in some meats or veggies and you got yourself some tasty eats
Oatmeal can also be very good, peanut butter/fruits(dried or otherwise), I like to add brown sugar or honey that that might not be to your taste.
Gnocchi. Potatoes take a while to cook, but then just add flour and egg, roll, shape, boil, toss in sauce. It could take hours and be a disaster if you’re new to it, but 20 mins from cooked potatoes once you’re good. Get a potato ricer.
Pizza. Flour+water+yeast+salt, tinned tomatoes + salt + pepper + olive oil + herbs + whatever, shape+bake. Under an hour from hunger to plate, once you’ve got your process down.
Potato salad! Just add peas & carrots w/ mayo on top
At night, in a container put layers of yogurt, frozen fruit, and oats. Maybe add a little water. In the morning it is ready to eat. Oats will soften. It’s a healthy parfait.

Grilled cheese is so good tho
Can make it healthier with good bread and add grilled veggies.
also you can easily add more protein with some deli meat, not super budget but its definitely easy
So…i don’t want to be a downer…i just read a study that said deli meats are JUST AS carcinogenic as smoking!
Ps…i love cigarettes and processed meats …uh oh :(
gross warning This just makes processed meat sustainable. Eat processed meat, grow tumor, extract tumor, process, repeat.
noo wtf :(
Yeah, thanks I love grilled cheese
