Eggs are always fantastic. It’s not cheese or ribs or hamburgers that keep me from going vegan, it’s eggs. Experiment with different prepapations and end products. You can make a soft poached egg in the microwave with some experimentation, since it depends a lot on the specific power output of your microwave.
What works for me:
Mix 4 oz water with a tiny splash of white vinegar. Microwave full power 60s.
Swirl the water with a spoon, crack the egg and drop it in the water.
Microwave full power 30s. Remove, swirl the water.
From there, it’s 1 or two more iterations of 10 seconds on full power, swirl, check for doneness.
I eat it over rice or toast or lots of different leftovers.
Scrambled eggs are great, you can add a bit of milk to fluff them up, I find I prefer no milk which makes them a bit more toothsome. Top with salt + pepper l, maybe cheese.
Fried eggs on a sandwich.
Sofboiled eggs in soup.
Eggs are the shit.
For sure, eggs are king. Definitely the hardest part of a vegan diet, cus they are so versatile!

Oats in cold milk is an excellent meal with hot coffee. To boost the oatey flavor or for a vegan option, use oat milk.
It’s possible to top this with any number of things, like ground cinnamon, caraway seeds, ground ginger, molasses, honey, fresh berries, walnuts, almonds, etc. If you have the time or desire, you can even heat the oats with the milk of choice.
How easily and quickly do you want?
I know this works for lots of people but cold oats + milk is disgusting to me. Just microwave it and oatmeal! Will also be easier to digest the oats…

Yeah, that’s just how it is with nuts. Fresh sliced banana is tasty too and perchance more affordable than nuts wherever you may reside.
Just combine the lot and do coffee in oat milk cappuccino. Or oaty coffee and a muesli bar with all the exciting things.
I’m a big fan of good cow milk, but I’ll choose oat milk half the time with coffee – because it tastes good together. Try all the oat milks until you find a good one.

Broiled Tilapia Parmesan
Prep Time: 5 m | Cook Time: 10 m | Servings: 8
Ingredients:
1/2 cup Parmesan cheese 1/8 cup butter, softened 3 tablespoons light mayonnaise 2 tablespoons fresh lemon juice 1/4 teaspoon dried basil 1/4 teaspoon ground black pepper 1/8 teaspoon onion powder 1/8 teaspoon celery salt 2 pounds tilapia fillets
Directions:

Preheat oven broiler. Grease broiling pan or line with aluminum foil.

Mix Parmesan cheese, butter, mayonnaise, and lemon juice together in a small bowl. Season with dried basil, pepper, onion powder, and celery salt. Mix well and set aside.

Arrange fillets in a single layer on prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip fillets over and broil for 2 or 3 minutes more.

Remove fillets from oven and cover with Parmesan mixture on top side. Broil until fish flakes easily with a fork, about 2 minutes.

I bought frozen tilapia at Econo this morning…he’s coming at 3pm (AST)…and it’s not “ah well” more correct: it’s wonderful to share weather it be code or recipes…my friend will probably make some changes, but like good free software people…i will share our adjustments with you.

Chili con soy/tofu.
Just onions, garlic, tomato concentrate, kidney peas, corn, pepper.
You add pepper powder, some herbs, nutritional yeast extract, soy sauce for the umami.
The soy granulate or tofu is best when soaked in herbs, nutritional yeast and soy sauce.
Just throw everything together and boil for 20min.
sounds really good. If you can find dry kidney beans, they are way cheaper and it’s easier to add larger quantities ;)
This recipe is good for you, the climate and the animals!
Something super easy if you have an oven: Just put some soft cheese (for example Camembert) into your oven for about 20 mins at 180°C. Cut it open after about 10 mins the way you can see here: If you don’t have anything to put it into for baking, just wrap in Aluminium foil.
Then eat it with baguette, chopped vegetables or even grapes.

also you can easily add more protein with some deli meat, not super budget but its definitely easy

At night, in a container put layers of yogurt, frozen fruit, and oats. Maybe add a little water. In the morning it is ready to eat. Oats will soften. It’s a healthy parfait.

Pizza. Flour+water+yeast+salt, tinned tomatoes + salt + pepper + olive oil + herbs + whatever, shape+bake. Under an hour from hunger to plate, once you’ve got your process down.
Potato salad! Just add peas & carrots w/ mayo on top
