I have been using Gnome with Pop! OS’s “pop shell” Gnome plugin. It’s a good balance for me between the benefits of a tiling window manager and the convenience of a full-fledged DE.
I have been using proton for a year or so and really like their entire ecosystem. The only issue I have with their Linux client is that the app borderline explodes with tiling window managers lol
I know you stated wanting to run it on bare metal, but why not docker containers with a compose file? Would keep your system clean.
If you want to go electric, then induction is definitely the best. Be aware that you need to make sure your cookware is conductive (if you can stick a magnet to it, you are probably good).

Just ordered the spacebar because of your post! Looks sweet.
How is the 6? I have heard terrible things about it having a lot of hardware defects.
Looks great! How did you make the noodles?

Shreddit on github has an option to use GDPR files as a source (might double post, jerboa timed out the first time)
Nice! Love the caps!
Interesting. I’m using Jerboa right now and while I have a few complaints, scrolling speed isn’t one of them. I wonder if it’s a phone specific issue.
IMO, go with either Fedora Workstation or Pop! OS (I would probably lean towards Pop! OS since its your first experience with Linux)
