Mine is rice, beans/tofu, a random assortment of sauteed veggies, and some random sauce from my fridge.

Tofu scramble is pretty fast to make, i just fry mushrooms with some olive oil for about 5 mins, then add tofu (dont need to press it), smash the tofu up with my fingers till its scrambled up and put it in with the mushrooms. cook for another 5-10 mins to dry the tofu out a bit. for spices i add at the end a bunch of nooch, salt/black salt, pepper, and some turmuric for the color. Usually eat it with some salad and hummus and bread
This is one of my favorite quick and dirty recipes too. I usually add some soy milk and nutritional yeast too just to make it a little less dry :) I usually add some onions and broccoli too
Nothing’s easier than porridge! Just water, oats and fruits of your choice. Then chop up some dates and them to the mix. Microwave 2 min and top with cinnamon, nuts and seeds. Healthy, easy and delicious.
Also smoothies. Just get a banana, apple, nuts, chia seeds, flax seeds and blitz. Then add some water and a generous amount of frozen berries. Takes 10 min at the most.
For mains? Just set some rice to boil on the side. In the meantime, chop onions, garlic and tomatoes, fry 'em up and add your choice of spices. Then throw in a can of lentils/beans, maybe some chopped broccoli and sweet potatoes if you want. Let the whole thing simmer for 10-15 minutes. Ideally your rice and stew are ready at the same time!
For something truly quick – chop some broccoli and blanch for a minute. Transfer to a pan with olive oil, stir fry with some chopped garlic and chilli flakes. Meanwhile, use the blanching water to boil your spaghetti. Add the spaghetti (with some of the pasta water) to your pan and mix it all up good. Serve as you like! (Optionally you can top it off with grated vegan cheese, but I like to avoid processed foods as much as I can. Instead, you could chop up some nuts and sprinkle a generous amount of nutritional yeast).
Throw tofu, green onions, avocado, and bell peppers over white rice and then top it off with very hot chili oil and soy sauce.
Super fast if you have leftover rice and so tasty.
Packet of vegan ramen + tofu and veggies. I like broccoli, shredded carrots, purple cabbage, bean sprouts, mushrooms…pretty much anything would be good. Sometimes I’ll throw in a handful of peanuts or bean sprouts for some crunch. Also, you could add kimchi or sambal for more flavor. Still not healthy really, but it doesn’t take much to elevate it quite a bit and it’s real quick if you have the veggies prepped beforehand.

I fry some onions and garlic, add lentils or some other legume. Add whatever spices I feel like that day and some canned tomatoes. Finally boil some rice. I might add some spinach and sun-dried tomatoes if I am feeling fancy.
I call mine clean out the fridge stir-fry.
Take whatever veggies you have that might be about to go bad. Find what spices normally make a stir-fry. Add those and some tofu and you’re done.
Along with it add whatever kind of vegan noodles or rice you like.
What kind of sauce do you use?
My personal favorite is carolina treat (its a US southern thing), but I also like sriracha, chili oil, and Tabasco (can you tell I like spicy things lol)

But seriously, canned beans of choice cooked with hot peppers, hot salsa, nutritional yeast, minced onion, and microwave rice. Cheap, filling, easy, and relatively healthy.

If I’m feeling beyond lazy:
- Peanut butter toast
- Peanut butter banana/jelly sandwich
- Hand full of assorted nuts/seeds and a glass of soy milk
If I have 10 minutes:
- Pasta with tomato sauce and Gardein be’f
- Rolled oats w/ chocolate protein powder, peanut butter, flax meal, and a banana
- Soup from potato, carrot, onions, garlic, bouillon/stock, and macaroni (optional add on of Gardein be’f)
- Garlic butter(*ish) pasta
One minute warm up meal prep:
- Homemade chick wheat sandwiches
- Chili (optional toast/naan)
- Chickpea, tofu, carrot curry
Protip: if you have an Aldi near you, they have very cheap mock meats and cheeses ($1-4) a pack. Just check for vegan logo as some have egg/milk.
cant really go wrong with rice and lentils, and i love to add a bunch of spices then some crushed or diced tomatoes, then cook it for a while. its pretty inexpensive where i live and its gotten me through a lot.
My established favorite is soba noodle with mixed vegetables in asian-inspired peanut sauce! I use whatever veggies I got in the fridge or freezer. Sometimes I add tofu or seitan.
Recently I have been enjoying savory oats whereby I also add whatever veggies I have on hand, but typically use a curry sauce instead.
Might sound a little dodgy but cabbage pasta. You heat up your oil and caramelise some sugar in it before adding cabbage and salt. After this is all soft and tasty you add it to pasta. Super simple but insanely delicious. Works really well with peas too.
I don’t know if it counts as a full meal, but a quick smoothie (plant milk, oats, soy protein powder, leafy greens and frozen fruit) is my go-to
