It’s a lot of stuff, like your posts, comments, saved posts, posts you’ve upvoted/downvoted, messages, etc.
Afaik, this was always possible and mandatory in the EU.

This can be good for wiping your account so you know the exact URLs where your content is located so you can delete them. Reddit will only display 1000 posts or comments in your profile and other parts of the site, but the omitted content is still publicly visible if you know where to look, worse, content not actively deleted before deleting your account will remain visible forever.
PSA on content deletion: I generally recommend editing posts and comments to something generic like “#” as Reddit (supposedly) only actively stores the latest edit.
