I’m trying to upload .mov video, but I get “upload failed, server encountered an error”. I see that the format should be compatible. I also tried to convert to mp4, but it didn’t work as well.

Yes, I recorded with an iphone.
That might be it, I used kdenlive to convert, but perhaps its problematic to use that program for converting.

I tried to upload on another peertube instance as well with the same message. But I could try that though.
