    Linux is merely a kernel, it by itself can’t run a server. Those server apps or other “Linux programs” as they are commonly called actually depend on a wealth of other userspace programs and libraries, none of which are part of Linux, the kernel.

    Also, many of those so-called “Linux programs” (including servers) can run on Android’s Linux, although sometimes you might use something like Termux to install a complete GNU environment in order to run those. It is possible to install a complete GNU distribution including graphical tools using an app such as UserLAnd.

    Also, it being dependent on Google is completely irrelevant to Linux, the kernel. It’s entirely possible for a Linux based OS to have crapware bundled into it (Edit: Also, this image is of LineageOS, which does not include Google crapware by default).
