Lemmies seems more correct, but i see lemmys around frequently

Do you mean the different Lemmy websites? The plural form should be “lemmies,” but I would refer to all of them as the collective “Lemmy,” because having a plural form doesn’t make much sense. It would be somewhat like referring to several computers running Linux Mint as “Linux Mints.”

Sure, it can certainly work as an informal shorthand.
