Restaurant discourse is funny to me, because line cooks are my favorite example of “people aren’t motivated by profit”.
If people were purely (or mainly) motivated by money, then you’d never be able to staff a kitchen. People don’t work shitty hours for shittier wages on even shorter schedules if it weren’t for the love of the work - I recognise a lot do it because they’re immigrants and it’s all they can get, but I hope you get what I mean.
After that you can discuss all sorts of stuff, but the way the world is now, kitchens are pretty good refutations of capitalist morals.
My brother often talks about how line work drove his love of cooking out of him. Fortunately he’s come back around on it and is doing a bit more lengthy cooking for pleasure, but damn it sucked the soul out of him.
