i haven’t used an induction stove but aren’t they kinda fragile? when you’ve got more than 4 pans going you’ve usually got to be moving them around pretty quickly. i guess you could learn to use it differently but for me it wouldn’t be an easy adjustment from gas range in a line cook type setting.

thats actually disappointing lol, i really liked using it. probably because trying to do any of that stuff without it was almost impossible haha
