It’s a matter of energy. Cows are really bad at converting input energy into output energy. Even chicken are better at that.

Chickens are pretty good but you need to feed them. Cows eat grass that is growing anyways. It’s converting grass that would otherwise go to waste. you can grow grass pretty much everywhere. Places you can’t grow corn.
