For those who don’t consider themselves particularly great cooks, blanching is super simple and quick, and if you prefer the meal hot, shocking isn’t an absolute must.
As I’ve gotten older I have developed a taste for simple things like blanched fresh vegetables far more than when I was younger. It feels so nourishing even though it isn’t something you could ever find at a restaurant. Thanks for writing this!

I love blanching and while I can agree that it’s not a word that is heard a lot, to me it’s one of the most simple and easy way to cook things! It’s so much easier than steaming and I can perfectly control the doneness.
It’s my favorite method for leafy greens and sweet veggies because it really makes the flavor shine.

Just a fun observation! I crave sodium because I take spironolactone, so I know what it’s like to just need a salt bomb.
Oh! I was confused because the giant pile of oyster sauce is probably the biggest source of sodium on this plate.
I didn’t season the rice or veg apart from those sauces, and this was my only meal yesterday so I’m not concerned with the sodium. That and having low blood pressure overall lol.
Oyster sauce is made with soy sauce! That’s where the salt comes from.
Basically that’s three different salt-heavy toppings - I get like that when cravings get bad lol
