Champ is the older spelling of chomp. They mean the same thing. At some point a shift in pronunciation occurred and spelling has reflected that, but the older version has been preserved in the phrase “champ at the bit”
I may be wrong but I think it may be more pedantic to argue that the incorrect pronunciation of a common phrase should be accepted due to pedantry is more pedantic?
