Some really simple(and nice) curry with tofu and some veggies. On the side cauliflower ‘rice’ and some store bought naan bread.

I’m surprised by how fluffy the ‘rice’ looks. Did you process it to that texture or was it purchased?
The ‘rice’ I just bought in the supermarket because I’m lazy. But it’s basically really tiny crumbled/cut cauliflower and then cooked voor 2 minutes in water. (You can also stir fry it)
So you can easily make it your self, but curry is for me a simple, creamy, lazy and comfort recipe. So as long it’s cheap I just buy the pre made. (Expect for the tofu as I(and especially my panther) like my Species more)
