Seems delicious except for the dressing. Maybe in missing out on something really good, but I think I’d have just done oil and vinegar with the dill. What did it taste like?
I’ve been making a lot of dressings with aquafaba and lemon juice/zest plus aromatics. It’s surprisingly good given the lack of oil. Give it a shot. You may indeed be missing out. I don’t have anything against olive oil; it’s just a variety thing for me.
