Romaine with some shredded carrots, celery, tomatoes, chickpease, cucumber, olives and a home made dressing made with apple sauce, vinegar, dill, salt, pepper and aquafaba from the chickpeas

    Seems delicious except for the dressing. Maybe in missing out on something really good, but I think I’d have just done oil and vinegar with the dill. What did it taste like?

      I’ve been making a lot of dressings with aquafaba and lemon juice/zest plus aromatics. It’s surprisingly good given the lack of oil. Give it a shot. You may indeed be missing out. I don’t have anything against olive oil; it’s just a variety thing for me.
