I posted this to mastodon (link) a few weeks ago and thought I’d share here as well :)
There’s no ‘proper’ recipe as it’s something I improvised but here’s what I did:
I grated the tofu and added it to a hot, oiled pan to brown it off, then added a few splashes of soy sauce, a dash of taco seasoning, a cheeky blob of tomato puree, and and some nooch. Then I tossed in some red kidney beans, and some diced onion and green pepper. Fried on high until the onions went clear.
Wrapped it up with some fresh salad and vegan chilli mayo 🌯
