    I think I built up Nashville style hot chicken from Nashville too much in my head. I was disappointed with Hattie B’s not because it was bad, but because it wasn’t significantly better than what I get in Texas. That said, not a bad deal since it’s still damn good and means I can get something very comparable close to home.

      Yeah, the premise of Nashville hot chicken is simple enough that you’re not going to get some secret technique that requires the cook to get up at 3am to start the slow smoker or anything, so all you need for the authentic experience is a cook that knows what to do instead of some corporate slave that goes “it’s just spicy chicken, right?”

      Don’t go to Hattie B’s for the OG. Hattie B’s is honestly a sort of white washed version of the Nashville originals that were around for 40+ years. Would recommend Bolton’s next time. Prince’s is pretty good, but not the same after the original storefront burned down right around COVID
