    What are the consequences of consuming uncanny valley muscle meat? What could we discover a decade later? Whenever we tamper with food, there are often negative outcomes. A mentor of mine used to work as a chemist at Monsanto and witnessed the introduction of trans fats as stabilize— making foods with them shelf-stable for longer periods. He became concerned about their impact on human health as our bodies struggle to absorb them. Eventually, he left his career after pleading with his superiors about the potential hazards they posed.

    It sounds like lab meat cuts costs for producers by conserving resources, yet I’m sure it will be every bit as expensive (if not more) for consumers.
