A lot happened during my hiatus, but I am back on my feet now. Since things are getting my way again, it is time to post more delicious Thai food!
One thing I missed a lot when living abroad was the taste of noodle soups. It was common enough for Thai restaurants catering to native Thais to offer a few options of noodle soups. Most of the time, unfortunately, the soups were either clear or prepared for stewed meats. It was never cooked grainy, condensed, and with potent tastes like this.
Here comes boat noodles. Choices are often, almost always with rice noodles, meats such as beef or pork, smooth meatballs, sometimes with offals, deep-fried pork fat, morning glory shoots choped into small pieces, and coriander garnish. All these ingredients are served with a small amount of soup prepared with stock and blood, then seasoned with ample amount of dried chili, vinegar, a dash of sugar, and other secret twists, depending on each establishment. In most cases, you never need to further season the bowl. It is ready to eat as is. Not to mention that this is historically eaten as snacks; the bowl will be small, the portion will be enough for a few spoonfuls only. For ladies, this is ideal for sate her appetites. For young men, it is a competition to reach the sky by stacking finished bowls, a dozen and so on. But in recent trends, the bowls become bigger, becoming regular sized noodle bowls like others. I do not know why.
Higher-end establishments took note of the layperson’s fuel of the day no-brainer food and started adding more expensive proteins. Wagyu beef, pedigree Thai beef, kurobuta, the list goes on. I sure hope that I do not get to see some exotic animals in my bowl, like crocodiles. Please do not do that.
As I mentioned earlier in the description, that things are getting better in my life, my spouse and I one day went to one establishment and ordered this very bowl shown in this thread. We thoroughly enjoyed their offerings. With a price tag to match.
