Mayo, though I’ve dabbled in ketchup and curry ketchup as well, especially mixed with mayo.
Unless it’s friet stoofvlees, the only acceptable answer is mayo.

They should be fresh, although I’ve seen versions with roasted ones too.

Interestingly it tastes much better like this than a Single premixed sauce made from mayo and ketchup.
