What’s your favorite easy/lazy meal prep with mainly Costco ingredients? Mine is a creamy chicken pesto pasta:

  • Cook chicken breast in a pan while boiling short pasta
  • Simmer together heavy cream and Kirkland pesto
  • Combine cooked pasta, chicken, sauce, sun dried tomatoes (that huge jar in the sauce aisle), and mix in gorgonzola/blue cheese if you have it. Serve with parmesan and pepper.

    The easiest one for me to to slap one of those giant pork butts on the smoker for 15 hours and make some pulled pork.

    Ngl mine is making TONES of kofta (which is like, Mediterranean beef/pork meat on sticks without the stick) and freeze them in 400g portions so I never have to cook again (untill next batch anyway) ugh my life’s never been better tbh plus im loosing weight (safely) cause it’s 100% keto :D

    Pesto noodles with chicken Apple sausage and grape tomatoes. All available at Costco! Can modify to remove sausage for vegetarians or add arugula if desired

    Throw frozen Normandy vegetables on a sheet pan. Thaw frozen chicken breast or thighs, cut up into chunks and mix into the vegetables on the pan. Bake at 400 for 20 minutes, then broil for 5 minutes to add some color. Simple, inexpensive, healthy and only one pan to clean!
