LalBrew® LoNa™ is a maltose-negative hybrid strain that has been selected to have ideal characteristics for the production of low and non-alcoholic beers.

I haven’t used this strains yet but I have played around with NA homebrews.

Obviously your OG is going to be closer to your FG.

You’ll still want to pasteurize the wort.
