I’m currently on 20, I’m a noob so I usually stick with ‘stable’ versions, which might be what 20 is since it has LTS?

Depends on what software you use. Basically a more ‘stable’ version tends to contain fewer bugs but also less features. Ubuntu, even in non-LTS versions, is always relatively stable, so you won’t run into issues with it. You can upgrade if you actually miss newer versions of some software, but there are other methods; for example, if I need the latest version of something, I simply add a PPA or third-party repository while leaving the rest of the LTS system unchanged.
