How can i manage the categories of an installation (add, delete, etc)?

You might be able to do that directly in SQL. But generally the categories are badly implemented, dont support localisation and other things, so we will likely remove them sooner or later.
So it doesn’t make sense to think about a structure of the categories for my installation?
I’m not sure what you mean, but anyway you should just forget that categories exist. Now that you mentioned it, I will have a go at removing them in the next days.
