I made some baguettes and they were good but the effort was too high for me to want to use the whole bags in that way, plus they kind of weren’t very filling for how calorie dense they were.

Simple “Flat” Bread Recipe I figured out a few days ago;
- Add your preferred amount of yeast to water
- Mix in flour (and Italian seasonings if preferred) until only slightly sticky
- Kneed for about one minute
- Separate into roughly 3 cm balls
- Flatten to about 1 cm thick
- Fry on a cast iron (or any heavy pan), flipping when the bottom is cooked

A very similar recipe, but you would have to mix in some wholegrain flour (50/50 to use up your white flour, but just wholegrain works, too): flour, water, a little salt (no yeast), cut into balls, roll, ‘fry’ without oil, and you have something like a chapati.

Def start a sourdough starter, partner and I have been doing sourdough for many years now, its totally worth it. Once you get that going, there’s a ton of really good recipes to try.

Sourdough takes like two weeks to get a starter going, then you have to keep feeding it to keep it alive (like once a week in the fridge). But then you can use that to make good, bakery-quality bread for years. Its a deep rabbit-hole but very worth it in terms of how cheap it is in the long-run, and quality.

Noice. Youtube has great guides for getting a sourdough starter going, and then good recipes by professional bakers once you have that. You start with a basic recipe, then hone to your liking after doing it for months, then start to get into fancy additions and such. But having fresh bakery-quality bread is totally worth the effort.
