Why would you do this instead of using Firefox? The only reason to have a free Chromium-based browser (e.g. Brave) is for Web design testing as far as I’m concerned.
Even for Web design testing I think it is only suitable due to the limited support of CSS in Chrome/Chromium.
I had to deal last year as student with faulty CSS support, as example, for clip-path and “coloured letters” (partial support in this last case with special tag) in Chrome/Chromium.
The argument is that Ungoogled Chromium has less spyware than Firefox because “all” of it (or at least all they can find) is removed.
Firefox does some nasty stuff too. One could argue every major modern browser does, and sadly it’s almost true. However some like Brave (has done bad stuff in the past) and Ungoogled Chromium seem more trustworthy. Read: https://spyware.neocities.org/articles/firefox.html
The claim “[X] is more trustworthy than Mozilla/Firefox” needs a lot of evidence. The sheer amount of good they have done for the Internet is honestly hard to overstate.
By default, Firefox sends telemetry data to Mozilla and has a persistent websocket connection for push notifications. People are annoyed that they claim to be privacy friendly while their defaults are not.

Sounds like if you want to match the default behavior of un-Googled Chromium, modify your hosts file, don’t use Pocket, and opt out of analytics.
If you’re not willing to put forth that much effort and yet somehow, what matters most to you is avoiding Google while using one of their products, then I guess un-Google Chromium is for you.

I think that best practices should be implemented broadly and it should be easy to do. What percentage of the public will ever end up using un-Googled Chromium as their browser? Virtually none. At least Firefox out of the box is something that a regular person may actually use.

Sure but this is also posted on a community of a website that has several thousand members. The amount of persons who will ever see this submission is triple digits.

Didn’t this project reveal that they are never sure if they have removed all of the Google telemetry stuff because it runs so deep in the codebase?
I still applaud them for their work though, but this is something to keep in mind.
Hopefully this gets made into an Electron engine replacement so I don’t have to use the main branch Chromium engine in those apps.
It’s time to get rid of this vile surveillance! I still cannot understand what infuriates me more: the fact that they are really spying on me and on all users without my permission,https://utopia.fans/networks/google-data-tracking-how-to-track-users-on-the-network/ or the fact that they are also cheating on this? I think both facts are equally unpleasant.
