I’d rather do a vegetarian/vegan sausage and use that, I’m sure that’s going to taste a lot like carrot.

Absolutely, these are seasoned carrots on the bun. If they’re good they are good because they are carrots not because they look like hotdogs.

This looks very nice. But the recipe is too difficult for me to follow.
Yeah, too much text. Simplified: Boil carrots until fork tender. Mix the rest of the ingredients and put in a container with the boiled carrots for 1 day in fridge. Put carrots and some of the liquid in a pan, heat until hot. Eat on bun.
